Ingredients
8 servings
- 400 g Greek yogurt (10% fat)
- 1/2 pc cucumber
- 2 pc garlic cloves (finely minced)
- 1 tbsp olive oil
- 1 tsp lemon juice or white wine vinegar
- 1/2 tsp salt
Method
- Wash the cucumber thoroughly and grate it coarsely using a box grater (peeling beforehand is optional).
- Place the grated cucumber into a clean kitchen towel and squeeze firmly to wring out as much excess water as possible.
- Put the thick Greek yogurt into a mixing bowl and whisk it together with the olive oil and lemon juice until smooth.
- Fold the well-drained grated cucumber and the finely minced garlic into the yogurt mixture.
- Season the tzatziki with salt and stir all the ingredients thoroughly until well combined.
- Cover and refrigerate for at least 30 minutes before serving to let the garlic flavor infuse the yogurt properly. Makes about 8 servings.
