Ingredients
8 servings
- 80 g tahini (sesame paste)
- 60 ml lukewarm water
- 3 tbsp lemon juice
- 1 pc garlic clove (finely minced)
- 1/4 tsp salt
- 1 pinch cumin
Method
- Stir the tahini paste well inside its jar before measuring, ensuring the separated oil is fully reincorporated.
- Combine the tahini, minced garlic, lemon juice, salt, and cumin in a medium bowl.
- Whisk the mixture together; it will initially seize up, stiffen, and look clumpy (this is completely normal).
- Gradually drizzle in the lukewarm water one tablespoon at a time, whisking continuously.
- Keep whisking until the sauce transforms into a smooth, creamy, and pale ivory-colored emulsion.
- Adjust the seasoning with extra salt or lemon juice to taste, then drizzle over falafel, roasted veggies, or salads. Makes about 8 servings of 2 tbsp.
