Ingredients
2 servings
- oil for frying
- 20 fish sticks
- 4 large slices of white bread
- 100g arugula
- 2 tablespoons mayonnaise
- 1 tablespoon horseradish cream
- 1 tablespoon tomato ketchup
- 1 tablespoon sour cream
- 1 tablespoon hot chili sauce (e.g. Sriracha)
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon smoked paprika
Method
- Heat plenty of oil in a large pot or deep fryer to 180-190°C or until a bread cube browns in 30 seconds.
- Meanwhile, mix mayonnaise, horseradish cream, ketchup, sour cream, chili sauce, Worcestershire sauce, and smoked paprika in a small bowl.
- Fry the fish sticks in portions for 5 minutes until golden brown. Remove with a slotted spoon, drain on paper towels, and keep warm until all are fried.
- Brush 2 slices of bread with some dressing, place the fish sticks on top, and drizzle with the remaining dressing. Spread arugula on top, cover with the remaining bread slices, and serve immediately.
