Ingredients
2 servings
- 2 salmon fillets
- 2 tbsp sesame seeds (white or mixed)
- 1 small broccoli
- 1 piece of ginger (approx. 2 cm)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp neutral oil
- Salt
- Pepper
Method
- Cut broccoli into florets, wash and drain well. Peel and finely chop the ginger.
- Pat salmon fillets dry, season lightly with salt and pepper. Place sesame seeds on a plate and press the top of the salmon fillets into them until well coated.
- Heat neutral oil in a pan. Fry the salmon sesame-side down over medium heat until the sesame is golden brown. Then flip and briefly cook the other side to desired doneness.
- In parallel, heat sesame oil in a second pan. Briefly fry the ginger until fragrant.
- Add broccoli florets, fry briefly, then deglaze with soy sauce. Cook over medium heat for 5–7 minutes until the broccoli is tender but still has bite.
- Remove salmon from the pan and let rest briefly. Taste the broccoli and add a little water if the sauce has reduced too much.
- Arrange salmon fillets with the ginger broccoli on plates and spoon the remaining sauce over the broccoli.
