Ingredients
8 servings
- 25 g butter, plus some more for brushing
- 1 tablespoon olive oil
- 3 cloves garlic, finely chopped
- 100 g carrots, finely chopped
- 55 g celery, finely chopped
- 1 onion, finely chopped
- 1 red bell pepper, seeded and finely chopped
- 4 large white mushrooms, finely chopped
- 1 teaspoon dried thyme
- 2 teaspoons finely chopped fresh rosemary
- 1 teaspoon Worcestershire sauce
- 6 tablespoons tomato ketchup
- 1/2 teaspoon cayenne pepper
- 1.1 kg ground beef
- 2 eggs, beaten
- 55 g fresh breadcrumbs
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- salt and pepper
Method
- Heat the butter with the oil and garlic in a large pan. Add the vegetables and cook over medium heat, stirring frequently, until the liquid has largely evaporated.
- Remove from heat. Stir in herbs, Worcestershire sauce, 1 tablespoon tomato ketchup, and cayenne pepper. Let cool. Grease a loaf pan with butter.
- Preheat the oven to 160°C.
- Put the ground meat in a large bowl and loosen it with your fingers. Add the vegetable mixture, eggs, salt, and pepper, and knead carefully. Knead in the breadcrumbs.
- Put the mixture into the loaf pan, smooth the surface, and bake in the preheated oven for 30 minutes.
- Meanwhile, mix the sugar, remaining 5 tablespoons tomato ketchup, mustard, and a pinch of salt for the glaze.
- Remove the meatloaf from the oven and brush it evenly with the glaze. Put it back in the oven and bake for another 35-45 minutes, until it is cooked through.
- Remove from the oven and let rest for at least 15 minutes. Cut into 8 thick slices and serve.
