Ingredients
8 servings
- 400 g wheat flour type 1050, plus more for dusting
- 1 tsp dry yeast
- 1 tsp sugar
- 1 tsp salt
- 250 ml warm water
- 4 tbsp olive oil
- 2 tbsp olive oil (for the sauce)
- 3 cloves of garlic, sliced
- 100 g lean ground beef
- 200 ml strained tomatoes
- 1/2 tsp dried oregano
- 100 ml water
- Salt and pepper
- 200 g mozzarella, crumbled
- 4 thin slices of cooked ham
- 40 g chorizo, sliced
- 100 g diced bacon
- 40 g parmesan, freshly grated
Method
- Sift flour, yeast, and sugar into a large bowl. Add salt and warm water, then slowly stir in olive oil until everything comes together in a lumpy dough. Pour onto a floured surface and knead for 10 minutes, until the dough is smooth and elastic. Cover with plastic wrap and let rise in a warm place for 1 1/2 hours, until the volume has doubled.
- Meanwhile, heat olive oil in a medium saucepan and briefly sauté the garlic. Add the meat and brown for 10 minutes. Add strained tomatoes, oregano, and water, and simmer for 10 minutes, until the sauce has reduced by half. Season with salt and pepper.
- Preheat the oven to 220°C.
- Place the risen dough on a floured surface and roll it out to fit a rectangular baking sheet (30 x 38 cm). Place on the sheet and press up to the edges.
- Spread the meat sauce over the dough, leaving a 2.5 cm border around the edges. Sprinkle with mozzarella, then ham, chorizo, bacon, and parmesan.
- Bake in the preheated oven for 15-20 minutes, until the base is cooked through and the cheese is golden brown and bubbly. Cut into 8 pieces and serve immediately.
