Ingredients
2 servings
- 2 pc chicken pieces (approx. 200 g each, thighs or breasts)
- 100 g cremini mushrooms (sliced)
- 1 small onion (finely chopped)
- 1 pc garlic clove (chopped)
- 50 ml red wine (dry)
- 200 g crushed tomatoes (canned)
- 1 tbsp olive oil
- 1 sprig fresh rosemary
- salt and pepper
Method
- Heat the olive oil in a deep skillet and sear the chicken pieces thoroughly for about 8 minutes until browned, then remove.
- In the same skillet, sauté the chopped onion, garlic, and sliced mushrooms for 5 minutes.
- Deglaze the pan with the dry red wine and let the liquid simmer until reduced by half.
- Pour in the crushed tomatoes, add the fresh rosemary sprig, and season with salt and pepper.
- Return the seared chicken pieces to the skillet, embedding them nestled within the tomato sauce.
- Lower the heat, cover, and let it simmer gently for 25-30 minutes until the chicken is fully cooked and tender.
