Ingredients
2 servings
- 3 slices of streaky bacon
- 3 tablespoons of butter
- 1/2 onion, diced
- 1 clove of garlic, finely chopped
- 3 tablespoons of flour
- 350 ml of milk
- 280 g of Emmental cheese, grated
- 50 g of freshly grated Parmesan
- 125 g of sour cream
- 2 teaspoons of Dijon mustard
- 1/2 teaspoon of salt
- 900 g of freshly prepared French fries (double-fried)
- 2 tablespoons of fresh chives, for garnish
Method
- Fry the bacon in a pan without additional fat until crispy. Remove from the pan, drain on kitchen paper, crumble and set aside.
- Melt the butter in a pot over medium heat. Soften the onion in it for 4 minutes, stirring occasionally. Add the garlic and simmer for 1 minute. Stir in the flour and cook over medium heat. Gradually pour in the milk, stirring constantly. Reduce the heat and simmer for 3 minutes, until the sauce thickens.
- Stir in the Emmental and Parmesan cheese gradually, until the cheese has melted. Stir in the sour cream, mustard and salt. Keep the sauce warm until serving.
- Place the fries in a large bowl or on a serving platter and pour the sauce over them. Sprinkle with crumbled bacon and garnish with chives. Serve immediately.
