Ingredients
2 servings
- 1 tablespoon olive oil
- 15 g butter
- 2 shallots, finely chopped
- 2 garlic cloves, finely chopped
- 2 celery stalks, finely chopped
- 1 1/2 teaspoons smoked paprika powder
- 225 ml dry cider
- 1 liter hot chicken broth
- 250 g new potatoes, cut into 3 pieces each
- 1 corn cob, cut into 3 pieces
- 100 g smoked sausage, sliced
- 500 g clams, scrubbed
- 500 g large raw prawns with shells
- 1 handful fresh parsley, chopped
- Salt and pepper
- Fresh crispy bread, for serving
Method
- Put olive oil, butter, shallots, garlic, and celery into a large braiser. Cover and stew over lower heat, stirring occasionally, until the shallots are translucent.
- Add smoked paprika powder, cider, and hot chicken broth. Cover and bring to a boil, then let the potatoes simmer. Add corn and sausage slices and simmer for another 10 minutes, until the potatoes are almost cooked.
- Sort out clams with damaged shells and those that do not close when tapped. Add clams and prawns to the braiser and cook for another 2 minutes, until the prawns are pink and the clams have opened. Remove unopened clams.
- Remove from heat and let it stand for a few minutes. Then stir in chopped parsley and season with salt and pepper. Transfer to a large bowl and serve immediately with fresh, crispy bread.
