Ingredients
2 servings
- 6 slices toast bread
- 250 g chicken breast
- 1 tsp oil (for frying)
- 4 slices bacon
- 2 eggs
- 4 leaves iceberg lettuce
- 1 large tomato
- 3 tbsp mayonnaise
- Salt and pepper
Method
- Place the eggs in boiling water and cook for 10 minutes. Rinse under cold water, peel and slice.
- Halve the chicken breast horizontally so it cooks faster and evenly. Season with salt and pepper and fry in the oil over medium heat for 4–5 minutes per side until cooked through. Rest briefly and slice thinly.
- Fry the bacon in the same pan until crispy and drain on paper towels.
- Toast the bread until golden. Slice the tomato, wash the lettuce and pat dry.
- Spread four slices of toast on one side and two slices on both sides thinly with mayonnaise.
- For each sandwich top a slice spread on one side with lettuce, chicken and tomato and season lightly. Add a slice spread on both sides, top with bacon and egg and finish with another slice, mayonnaise side down.
- Secure each sandwich with two wooden skewers and cut diagonally in half.
