Ingredients

2 servings

  • 500 g wheat flour type 1050, plus some more for dusting
  • 1 packet dry yeast
  • 1 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 325 ml lukewarm water
  • olive oil, for greasing
  • 55 g poppy seeds
  • 375 g tuna in its own juice, drained and flaked
  • 3 tablespoons mayonnaise
  • 2 tablespoons fresh chives, plus some more for garnish
  • 200 g Emmental cheese, grated

Method

  1. Put flour, yeast, sugar, and salt into a large bowl. Press a depression into the middle and add water until everything can be kneaded into a soft dough.
  2. Knead the dough on a lightly floured work surface for 10 minutes. Cover and let it rise in a warm place for 1 hour, until its volume has doubled.
  3. Knead the dough again, divide it into 8 pieces, and roll them into balls. Press a hole into the middle of each ball with a floured finger and shape into a ring. Let it rise, covered, for 20 minutes.
  4. Preheat the oven to 220°C, line a baking sheet with parchment paper. Briefly cook the bagels in boiling water for 2 minutes, turning once.
  5. Put the poppy seeds into a deep plate. Lift the bagels out of the water with a slotted spoon, press them into the poppy seeds, place them on the baking sheet, and bake for 20-25 minutes, until golden brown and firm. Let cool on a rack.
  6. Preheat the grill to high temperature. Mix tuna with mayonnaise and chives. Cut the bagels in half, top with the tuna mixture, sprinkle with cheese, and bake under the grill until the cheese melts. Garnish with chives and serve immediately.
